  • 6 eggs
  • 2/3 cup feta cheese, crumbled
  • 3/4 cup wilted spinach
  • Liberal dashes of salt and pepper

Directions:

  1. For this Easter Sunday recipe you need to first preheat oven to 350 degrees F and then grease a muffin pan with cooking spray or line muffin tin with paper liners.
  2. Now take a large skillet and heat butter. Add onions and cook until soft, about two minutes. Add in mushrooms, pepper, summer squash and spinach and cook another five minutes. When done, remove from heat.
  3. Now you need to take a small bowl, beat eggs, salt and pepper. Add the vegetable mixture into the muffin cavities, filling about halfway. Pour egg mixture over each one, careful not to overflow the cups. Sprinkle feta cheese over eggs. Sprinkle with additional salt and pepper to taste.
  4. Bake for 15 to 18 minutes, or until eggs are fully cooked. Serve warm!

Carrot Cake Bites Recipe

Ingredients:
For the cake:

  • 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 3/4 cup corn oil
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • Dash of salt
  • 2-1/2 cups shredded carrots
  • 1 cup chopped almonds

For the frosting:

  • 2/3 cup light cream cheese
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Start this Easter recipe by preheating oven to 350 degrees F. Liberally grease an 8 x 8-inch cake pan with nonstick cooking spray.
  2. Mix sugars, oil, eggs and applesauce together until fully mixed. Stir in flour, cinnamon, nutmeg and salt until mixture is combined. Fold in carrots and almonds; mix well. Pour mixture into the prepared cake pan.
  3. Bake for 30 to 35 minutes, or until a toothpick inserted in the middle comes out clean. Let cake cool completely before you frost.
  4. While cake cools, prepare frosting by mixing cream cheese, powdered sugar and vanilla together with a hand-held mixer. Once cake has cooled, frost it and then cut into bite-sized squares. Garnish with extra carrots and enjoy!

Spicy Egg Salad Recipe

You generally think of an egg salad at picnics or even for school lunches. But it also goes very well Easter Sunday brunches. You can actually enjoy an egg salad in two ways, one of course as a salad and one as a sandwich.

Ingredients:

  • 8 hard-boiled eggs, chopped
  • 1/3 cup olive oil mayo
  • 1 medium carrot, chopped into pieces
  • 1 medium stalk celery, chopped
  • 1 teaspoon spicy mustard
  • 1 teaspoon chili powder
  • 1 tablespoon pickle relish
  • Salt and pepper
  • Fresh broccoli slaw or arugula

Directions:
Mix all the ingredients in a large bowl, stirring until fully mixed. Add additional salt, pepper or chili powder to taste. Serve on toasted bread with broccoli slaw or arugula and enjoy!
